In January, Greg and I participated in 21 days of prayer and fasting with our church. As part of our fast we refrained from meat and cheese, which meant we could no longer make most of our recipes and had to experiment with new ones for the periods when we were eating.
If you’re anything like me, the thought of meatless, cheese-less tacos makes you want to keep scrolling on to the next recipe. But don’t give up on these Vegan Cilantro-Lime Hummus Tacos so quickly! This recipe satisfied our taco cravings and was good enough that we actually want to make it again, even now that we’re back to our normal diet. Plus it’s healthier, which is a good thing no matter where you are in the year.
To make my Vegan Cilantro-Lime Hummus Tacos, you’ll need:
2 cloves garlic
1/2 cup green onions
1 can black beans
1 can corn
1/2 cup cilantro
1/4 cup olive oil
1/2 container classic hummus
4 flour tortillas (make sure they’re not made with lard to keep the recipe vegan)
Heat your olive oil on medium heat in a large pan. You can also make this recipe in a skillet, but whenever I stir ingredients in a skillet I always seem to make a big mess, so I’d recommend the pan.
While the olive oil is heating, chop your green onions and mince your garlic.
Then add both to the pan and stir. Continue heating for a few minutes, stirring often.
Add the black beans, corn, salt and pepper. Then squeeze the juice of one lime into the pan and stir everything together. Heat for five more minutes, stirring often.
While your black bean and corn mixture is heating, chop up the cilantro, add it to the pan and stir.
Continue heating and stirring your vegetables as you slice the avocado and spread hummus over the tortillas. For best taste results, heat your tortillas first.
Once your vegetables are fully warmed up, transfer them to the tortillas and garnish with the avocado. You can even add a little more loose cilantro if you want your tacos to look prettier.
It’s an easy vegan recipe to whip up, and the creamy hummus may just make you forget there isn’t actually any cheese!
