I could go on forever listing all of the wonderful things about autumn. From the changing leaves to the crisp air to the delicious pumpkin-spiced food, it truly is the most wonderful time of the year!
Greg and I were in Vermont this past weekend soaking in the beautiful fall weather and picking out the perfect pumpkins to adorn our home.
We settled on the largest pumpkins we could find (go big or go home, right?!) and headed back to the house to decorate. Then, inspired by our new pumpkins, I whipped up several batches of Pumpkin Spice Rice Krispies Treats. This recipe is super easy and tastes exactly the way autumn should.
To make, you’ll need:
10 ounce package mini marshmallows
6 cups Rice Krispies cereal
1/2 teaspoon pumpkin pie spice
1/2 teaspoon cinnamon
1/8 cup pumpkin puree
3 tablespoons butter
Begin by melting your butter in a large pot.
Add in the mini marshmallows (go ahead and eat a few first if you’d like!) and stir until they’re completely melted.
Now add your pumpkin puree and stir.
And then add the pumpkin pie spice and cinnamon and stir.
Once everything is evenly mixed, add in the Rice Krispies cereal and stir until the cereal is completely coated in melted marshmallow goodness.
Coat a baking pan with butter and scoop your Rice Krispies treats mix into it.
Then place a sheet of parchment paper over the pan and push down on it, using your hands to even out the mix and smooth it down. The warmer the mix is the easier it will be.
Then once the mixture is as even and as smooth as you can get it, place the pan in the fridge for your Rice Krispies treats to cool down.
When you’re ready, take the pan out of the fridge, slice the treats into squares, and serve!
