Last week was my 31st birthday, so what better way to celebrate than with ice cream?! I whipped up this delicious Roasted Pineapple & Blueberry Ice Cream and thought I’d share the recipe so you can make it too. Come on and celebrate with me!
To make, you’ll need:
1/2 cup maple syrup
2 tablespoons dark rum
1/2 cup blueberries
Vanilla ice cream
Begin by chopping your pineapple into cubes.
Then combine the maple syrup and rum in a medium bowl.
Add your pineapple chunks to the bowl and toss so they’re completely coated with the syrup mixture.
Place the pineapple chunks and syrup mixture into a large ziplock bag and store in the fridge for several hours so the pineapple chunks can throughly absorb the syrup mixture.
When you’re ready, skewer the pineapple chunks and blueberries, alternating between the two.
Then grill the skewers on medium heat for about five minutes until glazed, turning occasionally.
Then place a skewer over each bowl of vanilla ice cream and serve!
It’s a perfect treat for your birthday (or any day really)!
