March always feels like the worst time of the year. The occasional nice day dangles before you like a tease, and just when you get your hopes up warmer weather is finally here it goes back to being cold, dreary and dull.
But luckily there’s a silver lining: it’s Girl Scout cookie season! That’s right, boxes of these coveted cookies are now being sold, and it’s the perfect time to indulge, not just in the cookies themselves but in recipes made with the cookies!
Since Thin Mints are the best Girl Scout cookie there is (it’s a fact) I decided to make an easy dessert recipe including them. My Thin Mint White Chocolate Popcorn is so easy you can make it with your microwave. Plus it’s delicious, and mixes sweet and salty flavors with an added minty taste as refreshing as the winter chill outside.
To make, you’ll need:
2 bags sea salt popcorn
1 1/2 cups white chocolate melting wafers
8 Thin Mint cookies
1/2 cup white chocolate chips
1/2 cup chocolate chips
Green food coloring
Begin by popping both bags of popcorn and emptying them into a large bowl. Try to get rid of the un-popped kernels so you only have nice, fluffy popcorn left.
Then heat the white chocolate melting wafters in the microwave in 30-second intervals, stirring between intervals until the chocolate is completely melted.
Pour the melted white chocolate onto the popcorn and use a big spoon to mix it, evenly coating the popcorn.
Now for the fun part! Add three or four drops of green food coloring and stir again until it’s mixed in. You can do a few less drops than what I did… I got a little carried away because food coloring is so much fun!
Then break up your cookies and add them to the bowl, once again stirring everything together.
Finally add both kinds of chocolate chips and, you guessed it, stir it all together.
Line a baking tray with foil and spread your popcorn mixture evenly over the tray.
Then just pop it in the fridge for 5-10 minutes until the chocolate has hardened.
That’s it! When you’re ready, break the chocolate-coated popcorn into bite-sized pieces and serve! I recommend serving it chilled since the mint is more refreshing that way.
I had a few friends over to watch the Academy Awards on Sunday, so I figured this was the perfect time to serve my Thin Mint White Chocolate Popcorn. After all, nothing goes better with movies than popcorn!
It was so much fun having them over and showing them our new apartment!
