It’s my favorite time of the year! The calendar has finally changed to October, there’s a crispness in the air, and the changing leaves are painting the landscape in gorgeous colors. Plus everything is now pumpkin flavored, from coffee to donuts to cereal to dessert. I figured it was the perfect time to pair pumpkin with my favorite food: macaroni and cheese! And let me tell you, it was one delicious combination!
To make my Pumpkin Mac and Cheese, you’ll need:
16 ounces pasta (go ahead and pick whatever fun shape you want!)
2 cups 2% milk
3 tablespoons flour
2 tablespoons salted butter
8 ounces shredded sharp cheddar cheese
12 ounces pumpkin puree
First cook the macaroni to your desired firmness and drain.
Then combine the milk, butter and flour into a pot and heat until the butter is melted.
Then add the cheddar cheese and pumpkin to the mixture, and whisk away until it’s all mixed and melted.
Then dump the pumpkin cheese sauce onto the pasta, stir until the pasta is evenly coated, and serve… preferably with pumpkins!
It’s such an easy, delicious way to celebrate fall!
