It’s birthday month!
Since I’m turning 30 this year it’s an especially important birthday, so I’m packing this month with everything I love. I’ll be traveling to amazing places, eating delicious food, and celebrating with my favorite people. I can’t wait!
I figured I’d begin birthday month with a birthday dessert that combines two of my favorite things: sugar cookies and cheesecake! So come on and celebrate with me by making these delicious Birthday Sugar Cookie & Cheesecake Bars!
To make, you’ll need:
24 Golden Oreos
1/4 cup melted butter
8 oz cream cheese
1/2 cup sugar
1 teaspoon vanilla extract
A 16.5 ounce package of sugar cookie dough
Begin by preheating your oven to 350 degrees and spraying a 11×7 inch baking pan (you definitely want to use this size!) with cooking spray.
Then take out the filling of 24 Oreos (up to you if you want to eat it!) and put the cookies into a bag. Now crush the cookies into crumbs!
You can use a rolling pin, soup can, or meat mallet. I chose a meat mallet because it seemed like the most fun!
Mix the crumbs and melted butter in a bowl and then press the mixture in an even coat on the bottom of your baking pan.
Now combine the cream cheese, sugar, egg and vanilla into a different bowl and beat until smooth.
Spread the mixture evenly on top of the Oreo crust.
Finally, take the cookie dough and flatten it into small clumps. Then place the flattened dough over the cheesecake. The cookie dough will expand a little bit, so it’s ok if there are some cracks between pieces.
Continue until the top is completely covered.
Now bake for about 35 minutes, or until the cookie layer looks done.
Add sprinkles and then allow the pan to completely cool before putting it in the fridge for three hours.
After the three hours have passed you can cut into bars and serve, preferably chilled.
