Blueberry Caprese Salad


Summer is finally here, which means it’s time to plan picnics, barbecues, pool days, beach trips and, most importantly, the menus for each event. While this Blueberry Caprese Salad recipe is perfect all summer long, its red, white and blue colors make it especially ideal for the 4th of July. Plus it’s easy (and healthy) so you can throw it together while you’re throwing on your bikini.

To make, you’ll need:

1 container cherry tomatoes

2 containers blueberries

8 ounces mozzarella balls

1/2 cup olive oil

Fresh basil


Begin by cutting the tomatoes and mozzarella balls in halves or quarters.



Then combine them with the blueberries in a large bowl (I show them on a plate here for maximum patriotic effect).


Toss in the olive oil, add pieces of basil, and stir everything together. Then serve chilled.


See? It doesn’t get any easier than that.
