Happy almost St. Patrick’s Day!
I wanted to make something festive for the upcoming holiday, and I remembered how much fun these cookie dough bites were. So, I figured I’d make a slightly different version, but St. Patrick’s Day themed! Say hello to these delicious Mint Oreo Truffles:
I had been eyeing the Mint Oreos at the supermarket for a while now, and they work perfectly for this recipe. To make Mint Oreo Truffles, you’ll need:
1 package (15.25 ounces) of Mint Oreos
8 ounces cream cheese, softened to room temperature
12 ounces semi-sweet chocolate
Green sprinkles or frosting for decoration
First, process the Oreos (the entire cookies, filling and all) in a food processor until crumbs are formed, and they look like, well, dirt. But really delicious dirt.
Next, use a mixer to beat the Oreo crumbs with the cream cheese until you get a thick, sticky mixture. I found myself using a combination of the mixer, a fork, and my hands.
Once the ingredients are mixed together, roll the truffles into approximately 30-35 balls. Be prepared to get a little messy! When you’ve shaped your truffles, stick them in the freezer for about 30 minutes until they harden.
When the truffles are hard, melt your chocolate according to package directions. Then, 1 truffle at a time, dip the truffles into the melted chocolate until they are completely coated, and place them onto a baking sheet. Then it’s time to decorate! Go crazy!
Refrigerate the truffles for at least 10 minutes so the chocolate sets properly. Then it’s time to enjoy!
