I absolutely LOVE this chicken and mango recipe. It tastes so fresh and delicious that I’m always surprised when I remember that it’s healthy! Fire up the grill and gather the ingredients, because your dinner is about to be amazing!
To make Greek Yogurt and Mango Chicken Kabobs, you’ll need:
1.5 lbs boneless skinless chicken breasts
1 mango
1/2 cup chickpeas
1 tbsp parsley
1 tbsp minced garlic
3/4 cup plain Greek yogurt
2 tbsp olive oil
1 tbsp Dijon mustard
2 tbsp lemon juice
2 tsp kosher salt
1 tsp ground coriander
1/4 tsp pepper
2 tsp chutney
1 tbsp water
1 tbsp cider vinegar
1 tbsp canola oil
The first step is to make the chicken marinade. Begin by putting the yogurt and minced garlic into a medium-sized bowl.
Then add the olive oil, Dijon mustard and lemon juice.
Next pour the kosher salt, ground coriander and pepper into the bowl.
Now stir the ingredients together.
Cut up your chicken into cubes and place into another bowl.
Add the marinade to the chicken, cover the chicken completely and then cover the dish. Now chill for 1 to 4 hours depending on your patience level!
While the chicken is marinating, cut the mango into cubes.
Then prepare the vinaigrette by combining the chutney, water, vinegar and canola oil.
Now it’s time for the chickpeas!
Chop the parsley and add it to the vinaigrette.
Finally, stir everything together.
Once your chicken has finished marinating, thread it onto skewers with the mango.
Then grill the kabobs until the chicken is fully cooked. It should take about 10-12 minutes.
Once the chicken is ready, drizzle the vinaigrette over the kabobs.
And now your dinner is ready to eat!
