These Nut Cup Cookies are absolutely delicious! They’re crispy on the outside, with a gooey, sweet inside. We normally make them over Christmas, but I’m pretty sure they will taste just as amazing year round!
To make the dough, you’ll need:
1/2 pound butter
1/2 pound cream cheese
2.5 cups flour
1/4 cup sugar
dash of salt
To make the filling, you’ll need:
1 pound diced walnuts
2 cups sugar
4 eggs
1.5 tablespoons vanilla extract
1/2 stick butter, melted
Begin by combining the dough ingredients into a large bowl.
Then beat the mixture together.
Don’t let the flour go everywhere like I did!
When you’re done beating, it should look like this:
Then gather the dough together into a ball.
And wrap it up to store in the fridge overnight.
To make the filling, begin by beating the eggs.
They should be beaten well, like this:
Now combine the filling ingredients into a bowl.
And use the beater again to mix it.
The result should be something like this:
After the dough has been refrigerated overnight, pat it into tiny balls and then use your fingers to press along the sides of a tiny muffin pan.
Then spoon in the mixture so that the cups are a little less than full.
Next, bake at 375 degrees for 20-25 minutes, until the cookies look like this:
I recommend serving them warm, so that the inside is hot and gooey.
