Last night I made these delicious Loaded Baked Potato Rounds for dinner. They were a perfect side dish, but also would be great for a party appetizer!
To make Loaded Baked Potato Rounds, you’ll need:
4 medium-sized red potatoes
5 or 6 strips of bacon
Shredded monterey jack cheese
Shredded cheddar cheese
Sour cream (optional)
First, preheat your oven to 375 degrees. Wash your potatoes and slice them into thin rounds, about 1/4-inch thick.
Place the sliced potatoes into a pot filled with water and bring to a boil, cooking for about 3 minutes or until tender. Then cook the bacon until it is crisp and crumble it into small pieces.
Next, place the potatoes on a baking sheet. Brush them with olive oil and season with salt and pepper. Layer the bacon and cheese on top of each potato slice.
Bake the potatoes in the oven for 10 to 12 minutes or until the cheese is melted. Serve with a side of sour cream, and they are ready to be devoured!
