For dinner last night I made Curried Chicken Salad with Almonds and Craisins, a recipe my friend makes often. I finally got him to tell me how to make it, and I had to share!
To make Curried Chicken Salad with Almonds and Craisins, you’ll need:
4 boneless, skinless chicken breasts
1/2 cup mayonnaise
1 teaspoon curry powder
1/2 lemon, juiced
1/4 cup chopped almonds
1/4 cup Craisins
handful fresh basil leaves, chopped
salt and pepper
Chop up your chicken and put it into a large bowl. Then add the mayonnaise, curry powder, lemon juice, almonds, Craisins, and basil.
Mix all of the ingredients together and add salt and pepper to taste. You may also want to add a bit more curry powder or mayonnaise if it’s to your liking.
I couldn’t resist adding more Craisins. I just love those things!
What I love most about this curried chicken salad is how versatile it is. You can turn it into a sandwich, put it on top of a salad, or just eat it straight out of the bowl. It is delicious in every way, and tastes even better the day after!
