Last night I made a veggie-tastic dinner. A Vegetable Tian, to be exact! It didn’t turn out too shabby, if I do say so myself:
To make Vegetable Tian, you’ll need:
1 yellow onion
1 teaspoon minced garlic
1-2 yellow squash
1-2 medium potatoes
1-2 medium tomatoes
Salt and pepper
1 cup shredded Italian cheese
1 tablespoon olive oil
Preheat your oven to 400 degrees. Finely dice the onion and mince the garlic, and sauté both in a skillet with olive oil for about 5 minutes. While the onion and garlic are cooking, thinly slice the rest of the vegetables.
Spray the inside of an 8×8 or 9×9 square or round baking dish with non-stick spray (or use butter!) and spread the onion and garlic in the bottom of the dish. Then place the thinly-sliced vegetables in the baking dish vertically, in an alternating pattern.
I had extra veggies so I ended up filling any space I could with them. Also, my veggies weren’t exactly all the same size. So don’t get too concerned about it looking pretty! Once the veggies are arranged in your baking dish, sprinkle salt and pepper generously over them.
Cover the dish with foil and bake for 30 minutes. Remove the foil, top with cheese and bake for another 15-20 minutes or until the cheese has melted.
I absolutely love this recipe and will be making it over and over again!
