Chilled Cucumber Soup

I love summer time, but it is hot, hot, HOT outside. I was in need of a recipe that was cool and refreshing, and Chilled Cucumber Soup was the perfect solution!

Chilled Cucumber Soup

To make Chilled Cucumber Soup, you’ll need:

2 large cucumbers, finely chopped

1 1/2 cups plain Greek yogurt

3 1/2 tablespoons fresh lemon juice

3 garlic cloves, minced

1/4 cup dill, stems removed and diced

1/4 cup parsley, stems removed and diced

1/4 cup olive oil

pinch of crushed red pepper flakes

salt and pepper

small handful of ice cubes

In a blender, blend the cucumbers until they are smooth.

Then add in the yogurt, lemon juice, garlic, dill, parsley, and olive oil. I also threw in some ice cubes so that it would be chilled right away.

Keep the soup chilled until it is ready to be served. If you use ice cubes it should be ready to eat right away! Season to taste with salt, pepper, and crushed red pepper flakes. I also added some dill, parsley, and a touch of olive oil on top.
