I am always on the lookout for healthy, easy recipes to make during the week for dinner. When I came across this Italian Sausage & Vegetable Sauté recipe, I knew that it would be a perfect week night meal. It’s delicious, easy to make, and healthy! What more could you want?!
To make Italian Sausage & Vegetable Sauté, you’ll need:
1 package Italian pork or chicken sausage
1 large white onion
1 orange bell pepper
5 cloves garlic
First, chop up all of the veggies and garlic. You can use whatever vegetables you’d like, but I stuck with zucchini, squash, white onions, mushrooms, and bell peppers. Potatoes would be a great addition as well!
If you choose to use pork sausage like I did, cook the sausage in a skillet over medium heat until the sausage is brown.
In a second skillet, add the onions and garlic and sauté them over medium heat until the onions start to brown. Then add the bell peppers, mushrooms, zucchini and squash and sauté the veggies until they are cooked through.
Once the veggies are ready, mix the sausage into the skillet and season with garlic salt and pepper to taste.
The smell in my kitchen from this recipe was absolutely heavenly. But the best thing about it is that I’ll have leftovers for days.
