Crispy Avocado Fries

Last night I made Crispy Avocado Fries, a delicious and healthy alternative to one of my favorite foods. They are amazing!

To make Crispy Avocado Fries, you’ll need:

2 large avocados, sliced

1/3 cup flour

Salt and pepper

1 teaspoon chili powder

2 eggs, beaten

1 cup panko bread crumbs

1/2 lemon, juiced

First, preheat your oven to 425 degrees. Set up an assembly line with 3 bowls. In the first bowl combine the flour, salt, pepper, and chili powder. Put the beaten eggs in the second bowl, and fill the third bowl with panko bread crumbs.

Place the sliced avocado in the flour mixture and lightly coat. Then dip the avocado into the egg bowl, and cover it with panko bread crumbs. Once this is done, put the avocado slices on a baking sheet.

Bake the avocado for about 25 minutes or until they are golden brown. Remove them from the oven and squeeze fresh lemon over the crispy avocado fries.

You can choose any sort of dipping sauce to serve with the crispy avocado fries. Ranch, chipotle mayo, garlic aioli… there are plenty of options! Enjoy!
