Graham Cracker Sandwiches

Last night I was craving an ice cream sandwich. Random, I know. But I am trying (keyword, trying) to eat healthy, so regular ice cream sandwiches were out of the question.

Instead I made Graham Cracker Sandwiches using lite Cool Whip and fruit. I think it turned out pretty well, don’t you?!

Graham Cracker Sandwich

To make these Graham Cracker Sandwiches, you’ll need:

Graham Crackers (reduced fat or regular)

Lite Cool Whip

Strawberries, thinly sliced


First, break the graham crackers in half.


Next, spread cool whip on top of the graham crackers. You can use as much or as little as you like.


Then, add strawberries and blueberries (or any other type of fruit) on top of the cool whip.



Next, place a graham cracker on top of the cool whip to make the sandwich. Wrap each sandwich individually in plastic wrap and put them in the freezer until they are frozen.



Once they are frozen, you’ll have yourselves a delicious little treat!

  1. What a great idea: these to eat instead of ice cream sandwiches, and these to make for the 4th of
    July. I’m having a get together and will make them for all of my calorie-obsessed friends!
