Saturday, June 21 marks the official start of summer, my favorite time of the year! Summer means barbecues, bikinis, and chilled cocktails by the pool (my favorite!).
This past weekend I made a Triple Berry Summer Salad, which will quickly become a staple over these next few months. It’s ready in a flash and is a perfect salad for a hot summer’s day.
To make a Triple Berry Summer Salad, you’ll need:
9 oz baby spinach
1 cup sliced strawberries
1 cup raspberries
1 cup blueberries
1/2 cup sliced almonds
1 avocado, chopped
4 oz goat cheese
drizzle of raspberry balsamic vinegar
First, wash the berries and thinly slice the strawberries.
Next, chop up the avocado.
Place the baby spinach in a bowl and top it with the berries, almonds, avocado and goat cheese. Then toss the salad with salad dressing. I used a raspberry balsamic vinegar, but any high quality vinaigrette will be fantastic.
And viola! You have your Triple Berry Summer Salad, ready to go.
