I recently stumbled upon a fantastic and super easy seafood recipe: Lemon-Marinated Shrimp with Mint Pesto! It’s ready in a flash and absolutely delicious, so I had to share.
For the Lemon-Marinated Shrimp, you’ll need:
1 pound 10 oz / 750 grams raw jumbo shrimp
Juice of 2 lemons
1 bunch fresh mint, chopped
2 garlic cloves, very finely copped
For the Mint Pesto, you’ll need:
1 garlic clove, coarsely chopped
8 tbsp fresh mint, coarsely chopped
3 tbsp extra virgin olive oil
1 tbsp red wine vinegar
1 tbsp heavy cream
1 tbsp grated Parmesan cheese
Salt and pepper
First, shell and devein the shrimp. Place them in a shallow dish and sprinkle with the lemon juice, mint, and garlic. Toss the shrimp well. Then cover and let them marinate for 30 minutes.
To make the mint pesto, put all the ingredients in a blender or food processor and process until smooth. Scrape into a bowl, then cover and let chill until required. Add salt and pepper to taste.
Next, drain the shrimp, preheat the broiler, and arrange the shrimp on a broil pan. Broil until the shrimp are pink on each side and cooked through. You can also throw these into a frying pan or barbeque them!
Remove the shrimp from the pan and transfer to serving plates. Add a spoonful of mint pesto and serve!
This is one healthy, delicious recipe that I will be making over and over again.
