Portobello Mushroom Pizza

Last night I was craving a gooey, cheesy pizza. However, I’ve been trying to make better food choices and wanted a healthier alternative. This easy-to-make, delicious Portobello Mushroom Pizza saved the day, and totally satisfied my pizza craving:

To make Portobello Mushroom Pizza, you’ll need:

2 large Portobello Mushroom Caps

Handful Baby Spinach Leaves

4-6 Tablespoons Marinara Sauce

1.5-2 Ounces Shredded Cheese

First, preheat your oven to 350 degrees Fahrenheit. Then, clean the mushroom caps and remove the stems. Lay the caps on a lined baking sheet. Beware, the mushrooms will release a lot of liquid, so make sure you cover your baking sheet with tinfoil!

Place a few leaves of spinach on the caps.

Smear 2-3 tablespoons of marinara sauce on each cap.

Top each cap with shredded cheese (3/4 to 1 ounce per cap). I clearly was generous with the cheese. Maybe a little too generous…

Bake for 20 minutes, then dig in!

The Portobello Mushroom Pizza is one of the best recipes I’ve made in a while. There are just so many things you can do with it! Add some grilled onions and garlic to the mushroom for some more flavor. Or top it with mozzarella, tomatoes, and basil for a caprese-style pizza.

The world (or in this case, the portobello) is your oyster!
