Ever since making the Goat Cheese and Spinach Crostini, I have become slightly obsessed with crostinis and bruschetta. They really make the perfect appetizers! I had some extra salad ingredients in my fridge, so I decided to whip up Greek Salad Bruschetta.
To make Greek Salad Bruschetta, you’ll need:
French baguette, sliced
1/2 cup tomatoes, diced
1/2 cup cucumber, peeled and diced
1/3 cup kalamata olives, diced
1/4 cup red onion, diced
1/4 cup feta cheese
1 tablespoon olive oil
Salt and pepper, to taste
First, preheat your oven to 400 degrees. Slice the baguette and place the baguette slices onto a baking sheet. Bake for 7-10 minutes or until the baguette slices are golden brown and toasted.
To make the Greek Salad Bruschetta topping, combine the diced tomatoes, cucumbers, kalamata olives and red onion into a small bowl. Add the olive oil and feta cheese, then season with salt and pepper to taste.
Add the bruschetta topping onto the baguette slices and serve.
Easy to make, healthy and delicious!
