Oh my gosh, this is the best dish ever! Every holiday my mom makes her Irish Potato Casserole, and it is to die for! I mean, how could you not love a dish that combines potatoes, butter, bacon, and garlic?! It is pure comfort food, and even though it’s meant to be a side dish, I always end up eating the leftovers for lunch and dinner. I’m just doing what I can to make my Irish ancestors proud!
To make my mom’s Irish Potato Casserole for your next holiday (or for your next… today) you’ll need:
8 Ounces Cream Cheese
8 Ounces Sour Cream
1/2 Cup Melted Butter
2 Teaspoons Salt
1 Bunch Green Onions
1/2 Pound Bacon
First bake the potatoes. Then remove the skin, and mash the insides.
Now beat the cream cheese until it’s smooth.
Next, slice the green onions into tiny pieces, and include some of the chive part.
Cut the bacon into bite-sized pieces with kitchen scissors before cooking.
Now for the fun part: fry!
Combine all the ingredients in a bowl except the paprika.
Beat until it’s all combined.
Now spoon the mixture into a lightly buttered 2-quart casserole dish. Then sprinkle with paprika!
Cover and refrigerate overnight.
When you’re ready/too impatient to wait any longer, uncover and bake for 45 minutes at 350 degrees.
