Pumpkin Bread with Maple Cream Cheese Filling

Since Halloween and even Thanksgiving are just around the corner (crazy, right?!), I figured it would be a perfect time to do a pumpkin recipe. This recipe makes 3 loaves of decadent, delicious pumpkin bread, so if you want less you can always cut down the recipe!

For the Maple Cream Cheese Filling, you’ll need:

2 packages (8 oz. each) cream cheese, softened

1/4 cup sugar

1 egg

1 tablespoon milk

1 teaspoon maple extract or 1 tablespoon maple syrup

For the Pumpkin Bread, you’ll need:

3 cups sugar

3/4 cup pumpkin puree (or 1 15 ounce can of solid-packed pumpkin)

1 cup canola oil

1 cup water

4 eggs

4 cups all purpose flour

4 teaspoons pumpkin pie spice

2 teaspoons baking soda

1 teaspoon ground cinnamon

1 teaspoon baking powder

1/4 teaspoon ground nutmeg

1 teaspoon salt

1/4 teaspoon ground cloves

1/2 cup chopped walnuts

1 cup raisins

Whew. Don’t let the long list of ingredients scare you away. This recipe is easy peasy!

First, preheat your oven to 350 degrees fahrenheit.

To make the cream cheese filling, beat the cream cheese, sugar, egg, and milk in a small bowl until creamy.

Then add the maple extract or syrup and blend. Set aside for now.

In a large bowl, beat the sugar, pumpkin, oil, water and eggs. Then, in a second large bowl, mix the flour, baking soda, baking powder, salt and spices. Gradually add the dry ingredients to the wet ingredients and stir in the nuts and raisins.

Next, pour half of the batter into 3 flour-greased 8″ x 4″ loaf pans.

Then spoon the filling over the batter. Use a spatula or wooden spoon to spread it out carefully.

Finally, add the remaining batter, making sure you completely cover the filling.

Bake the loaves for 50-60 minutes. Let cool for 15 minutes, and then enjoy!
