Guess what starts tomorrow? OKTOBERFEST! It’s Germany’s best holiday, and after attending several years ago I’ve never been prouder to be German!
Unfortunately I won’t be in Munich to celebrate this year, so instead I decided that I would do a recipe in honor of Oktoberfest. A recipe with an important German ingredient…
BEER!
To make my wonderful Beer Mac ‘n’ Cheese, you’ll need:
16 Ounce Box of Pasta
3 Tablespoons Butter
3 Tablespoons Flour
1 Cup German Beer
1 Cup Cream
4 Ounces Cream Cheese
8 Ounces Shredded Cheddar Cheese
8 Ounces Shredded Mozzarella Cheese
First cook and drain the pasta according to the directions on the box.
While your pasta is cooking, melt butter and add in the flour.
Mix until it turns into a thick paste.
Next pour in the best part (the beer!) and mix.
Then add and mix the creme too!
Bring the mixture to a low boil, then add in the cream cheese. Stir and heat until it’s melted.
Next add the second best part: the cheese!
Heat and stir until everything is melted.
Finally mix the sauce with the pasta.
And then serve… with your favorite German beer of course!

What kind of beer is best? Ale, lager, stout etc?
I recommend pilsner, but you can play around with different kinds depending on your taste!
A stout is an ale.

The alcohol will cook out, you shouldn’t have to use a substitute.

OMG! Made for dinner tonight and I’ve died and gone to heaven!! I used an amber beer since it’s what I had and it’s delicious! Super cheesy and smooth and creamy and the slight beer flavor is awesome. Was a quick and easy recipe to make. I’ll definitely be making it again!

I’m planning to make this for an Oktoberfest party this weekend. Can I made it the day before and reheat in a crock pot or is it best if I make it the day of?
It’s best the day of rather than reheating it. Enjoy your party (and the mac and cheese!)

Would this tolerate being finished in the oven? I’m a huge fan of the crispy bits of baked mac n cheese!
If you’d like to finish it in the oven, I recommend initially not cooking the pasta all the way. That way it won’t end up too mushy after it’s been cooked twice. Enjoy!
