California Sandwich

For dinner last night I wanted something quick, easy, and healthy. I whipped up an open-faced ‘California’ sandwich, which was exactly that.


You’ll need:

For the Chive Spread:

1/4 Cup Greek Yogurt

1 Tablespoon Finely Chopped Fresh Chives

Salt and Pepper

For the Avocado Salad:

1 Avocado, Peeled, Pitted and Diced

1 Tomato, Chopped

1 Cucumber, Diced

A Squeeze of Lime Juice

2 Tablespoons Chopped Fresh Basil

2 Slices Whole Grain Bread

2 Slices Pepper Jack Cheese

To make the chive spread: in a small bowl, mix the Greek yogurt and chives. Season with salt and pepper. Set aside.



To make the avocado salad: Peel and dice the avocado, cucumber, and tomato. In a medium bowl, gently toss together the veggies, lime juice and basil. Season with salt and pepper and set aside.




photo-521To assemble: spread the chive-yogurt mixture on both slices of bread and top with avocado salad and cheese.



You can’t get any easier and healthier than that!
